Baked Cod with parmesan and mustard

 

 Ingredients

  • 4 portions of Cod
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 2 tbsp freshly grated parmesan cheese
  • 1 tbsp plain flour
  • 3 cloves of garlic squeezed
  • 1 tsp dried bais
  • 1/2 tsp onion powder
  • 1 tsp dijon mustard
  • 1 juice of lemon
  • lemon wedges for serving

 Method  

  1. Pre-heat the oven to 180C Fan
  2. Lightly grease a 9 x 3 baking dish.
  3. Lay the Cod filets into the baking dish and season with salt and pepper.
  4. In a small bowl mix the butter, parmesan, flour, garlic, basil and the onion powder, dijon mustard, lemon juice.
  5. Cover each fillet with a large spoonful of the butter mixture.
  6. Bake in the oven for 10 minutes.  (Test the fish flakes with a fork)
