Baked Cod

Ingreients

  • a thick piece of fresh cod or more depending on how many are around the table to eat
  • 1/4 tsp of salt
  • 1.5 tbsp olive oil
  • 1 tbsp lemon juice
  • 3 pinches of cayenne pepper
  • 1 tbsp chopped parsley

 Method

  1. Pre-heat the oven to 200C
  2. Bake for 10 to 12 minutes.  Too long and the cod will become dry.
  3. Arrange the cod pieces on a baking tray or pyrex pie dish.
  4. Drizzle with olive oil, spinkle with lemon juice, salt and cayenne pepper.
  5. Garnish with parsley and serve immediately.

 I like this served with boiled potatoes and maybe some white sauce.
