Tarte aux Citron (Lemon Tarte)

Ingredients

  • Tarte aux biscuits Graham (Cream Crackers)
  • 2  eggs separated yolks and whites
  • 400g concentrated sweetened milk
  • 120ml juice of a lemon
  • zest of one lemon
  • 1/4 tsp cream of tartar
  • 55g sugar

Method

  1. Pre-heat the oven to 180C.
  2. In a bowl whisk the egg yolks and then mix in the concentrated milk, lemon juice, lemon zest.
  3. Bake in the oven until set.
  4. Allow to cool a little.
  5. Whisk the egg whites with the cream of tartar until stiff peaks are formed
  6. Spread over the lemon tarte and bake for 15 minutes.

Personally I like quite a lot of meringue so you might need more egg whites.  If not sufficiently brown then use a blow torch.
