Method
- Preheat the oven to 180C
- Drain the crushed pineapple
- Place the milk in a saucepan and stir in the ground rice. Then bring to the boil and boil for 2 minutes stirring continously.
- Remove from the heat and stir in half the coconut
- Pour over the pineapple and cook in the oven for 10 minutes.
- Sprinle over the rest of the coconut and bake in the oven for a further 20 minutes.
- Serve immediately with fresh cream or custard
