Tropical Rice Desert

 

 Ingredients

  • 400g can crushed pineapple
  • 600ml Semi-skimmed milk
  • 50g Ground Pice
  • 25g Castor Sugar
  • 50g Sultanas
  • 50g Desiccated Coconut

 Method  

  1. Preheat the oven to 180C
  2. Drain the crushed pineapple
  3. Place the milk in a saucepan and stir in the ground rice.  Then bring to the boil and boil for 2 minutes stirring continously.
  4. Remove from the heat and stir in half the coconut
  5. Pour over the pineapple and cook in the oven for 10 minutes.
  6. Sprinle over the rest of the coconut and bake in the oven for a further 20 minutes.
  7. Serve immediately with fresh cream or custard
