Method
- Melt the butter in a pan, remove from the heat and stir in the breadcrumbs, lemon rind, lemon juice, parsley, sardines and seasoning.
- Beat together until smooth and adjust the seasoning to taste.
- Spoon the sardine mixture into 4 or 6 small dishes or into one larger one.
- Place sliced lemon on top and chill until firm.
- Serve chilled with hot toast and lemon wedges.
