Lemon and Sardine Pate

Ingredients

  • 60 g butter
  • 90 g of fresh white or wholemeal breadcrumbs
  • grated rind and juice of half a lemon
  • 2 tsp finelly chopped parsley
  • 125 g can of sardines  boned and mashed with can oil or you can use fresh sardines with olive oil.
  • salt and freshlly ground black pepper
  • 4-6 lemon slices

Method

  1. Melt the butter in a pan, remove from the heat and stir in the breadcrumbs, lemon rind, lemon juice, parsley, sardines and seasoning. 
  2. Beat together until smooth and adjust the seasoning to taste.
  3. Spoon the sardine mixture into 4 or 6 small dishes or into one larger one.
  4. Place sliced lemon on top and chill until firm.
  5. Serve chilled with hot toast and lemon wedges.
