Hot Brussel Sprouts Slaw

 Ingredients

  • 225g thick-cut bacon (cut into 15mm pieces)
  • 55g unsalted butter
  • 1kilo brussel sprouts (thinly sliced in a food processor)
  • freshly ground pepper
  • 2 granny smith apples (peeled, cored, coarsely grated and squeezed out)
  • 1 tbsp apple cider vinegar
  • 1 tbsp minced peeled fresh gingerroot
  • 1 tsp fresh thyme leaves

 Method

  1. Cook the bacon in a large frying pan over medium-high heat, stirring occasionally, until crisp, about 6 minutes.
  2. Drain on paper towels.
  3. Pour the bacon fat into a bowl.Turn the heat under the skillet up to high and add 2 tbsp of the butter and 2 tbsp of the bacon fat.
  4. When the butter stops sizzling, add half the Brussel Sprouts.
  5. Cook, stirring often, until softened - with some of the sprouts browned and others still bright green - about 8 minutes.
  6. Season with salt and pepper and scrape out into a bowl.
  7. Cook the rest of the Brussels sprouts in the remaining 2 tablespoons butter and 2 tablespoons bacon fat.
  8. Return the first batch of sprouts to the frying pan, add the apples, vinegar, ginger, and thyme, and cook, stirring, until the apples are heated through, 1 to 2 minutes.
  9. Pile the slaw onto a platter, scatter the bacon on top, and serve.

This recipe will serve up to 8 people depending upon whether you wnt it to be main course or a side dish.  It is also a good sprouts recipe for Christmas.  If you want it for a vegetarian then miss out the bacon
