Jalebi

 Ingredients

  • 375g plain flour
  • 475ml hung curd or drained Greek Yogurt
  • 100g ghee (clarified butter)
  • 600g sugar
  • 5 strand saffron
  • 1/2 teaspoon powdered green cardamom
  • 70g corn flour
  • 1/2 pinch baking powder
  • 475ml sunflower oil
  • 710 mlpwater
  • 4 drops rose essence
  • 1/2 teaspoon edible food color

Method

  1. Mix the plain flour, cornflour and baking powder in a bowl.  Add the ghee and food clouring.

  2. Add the hung curd or greek Yoghurt, cover and leave for 8-10 hours in a warm place to ferment.

  3. To make the sugar syrup heat the water in a pan over medium heat.  Add the sugar and mix until fully dissolved.  Simmer the syrup until it attains a one string consistency. 

  4. Add the safron, cardamon powder and rose essence.  

  5. Put the mixture in a muslim bag or use an icing bag with a fine nozzle.

  6. Heat the cooking oil and squeeze the bag to make concentric circles into the oil.

  7. Fry until the jalebis are crisp and golden.

  8. Trnasfer the  jalebis to the sgar syrup and allow to soak for 2-3 minutes.

  9. Scoop out and place on greaseproof paper to drain.

Jalebis are delicious and much loved by Indian Children.  In the film,  LION, the little boy lost on the Indian Railways just wanted his brother Guddu to buy him Jalebis

Jelabi is an indian sweet liked very much by  children.  The little boy lost in the film called Lion wanted some Jelabi.  It is a spiral shaped crisp and juicy sweet made from flour, gram (chickpea) flour and sugar syrup.
