Method
- Place the flour, baking powder and butter in a mixing bowl and mix until combined and resembling bread crumbs
- Beat the egg and sugar together until creamy
- Mix the egg and flour mixutre together to form a pasty. Do not over mix and keep cool. You might need to add one or two tsp of cold water.
- Grease a flan dish
- Roll out the pastry and line the bottom and sides of the flan dish.
- Add sliced apples, sprinkle with cinamon and sugar to taste. If you are using British Bramleys then you will need more sugar than if you are using eating apples.
- Sprinkle with sliced almonds.
- Add knobs of apricot jam.
- Cover with strips of pastry.
- Bake at 180C until cooked and golden brown.
- Allow to cool and seive icing sugar over and serve with home made ice cream or pour on double cream. It you are like me you will use both ice cream and double cream
